Love love love this recipe. It’s actually one of my own and I make it even on ultra low carb days.
Serves 6-8
Ingredients
- 1 lb bacon, sliced into lardons
- 2 lbs brussel sprouts, trimmed and halved
- 1 1-1/2 cups freshly shreddeed parmesan
- Salt and pepper to taste
- Red pepper flakes to taste
Directions
- Preheat oven to 400 degrees.
- In a cast iron skillet (or other sturdy frying pan), cook the bacon until crispy on medium to medium low heat. Remove bacon from skillet, drain on paper towels, and drain most of the bacon fat from the skillet (I keep mine for other purposes, like sauteing other delectable items in it).
- Increase the heat under the skillet to medium high, and sear the brussel sprout halves in batches. You want a nice dark color on there (but not burnt).
- Add the seared halves to an oven proof glass dish.
- Add bacon and mix well. Season with salt, pepper, and red pepper flakes to taste.
- Sprinkle with shredded parmesan.
- Bake in oven for 20-30 minutes.
