Seriously a HUGE hit with the entire family. I think our son scarfed down like 5 the first night I made them! She has a whole bunch of variations off the base recipe but the one I made was the Almond Joy version. And it. is. delicious!
Original recipe from Well Plated
- 3/4 cup old fashioned oats
- 1/2 cup unsweetened, shredded coconut flakes
- 2 tablespoons chia seeds
- 1/2 cup almond butter of choice
- 1/3 cup honey
- 1/4 cup chocolate chips
- 1/4 cup chopped almonds
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- Place all of the ingredients in a large mixing bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any other spices you’d like to add. Stir to combine. Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).
- Remove the bowl from the refrigerator and portion the dough into balls of desired size.
