These pancakes are a huge favorite with our son. You can make them either as pancakes or waffles. I make them dollar-sized and he just gobbles them up almost straight from the pan/griddle.
Ingredients
- 6 eggs
- 1 cup cottage cheese (I use 6% milk fat when I can find it)
- 1 cup oats
- 2 tsp vanilla
- 2 heaping tablespoons almond or peanut butter
- 1/2 tsp salt
- 1/2 – 1 tsp cinnamon (depending on taste)
- 2 tsp baking powder
- 1/4 cup maple syrup (optional)
- 1 ripe banana (optional)
Directions
- Add everything to a blender and mix until smooth.
- Cook in your choice of fat.
- Enjoy!
