Since we can’t do a normal BBQ sauce bought from the store as they are all super high in sugar, but we absolutely LOVE pulled pork, I found an easy way to make it low carb with a fantastic lower carb BBQ sauce to go with! My husband loves this in his morning eggs, along with some grilled jalapenos.
Ingredients
Pulled pork
- Large pork shoulder (really, you can use any cut of pork that you want but I find that the pork shoulder works really well)
- 1/4 cup chicken stock or broth
- Onion powder
- Garlic powder
- Salt
- Pepper
- Chili powder
- Liquid smoke (about 1-2 tsp)
BBQ sauce
- 1 cup reduced-sugar ketchup (Or just use 1 whole small bottle)
- 4 tbsp tomato paste
- 1/8 tsp pure sucralose (You can use Splenda and use more but it will be higher in carbs)
- 1/2 cup apple cider vinegar
- 1/2 cup mustard (regular yellow mustard, not Dijon)
- 4 tsp. green Tabasco (or 1 tsp. red Tabasco)
- 3 tbsp Worcestershire sauce
- 1 tsp Liquid Smoke (or more, optional but recommended)
Directions
- Add the chicken stock/broth to the bottom of a large crock pot and add the pork on top. If using pork shoulder, make sure the fatty side is up. This will help make the pork nice and moist.
- Season liberally with the salt, pepper, onion powder, garlic powder, and chili powder. Add the liquid smoke on top.
- Let pork cook on low overnight.
- In the morning, pull the pork apart. I find it easiest to just keep tossing it over and over with a pair of tongs. It breaks up the meat nicely.
- Add 1/4 – 1/2 of the BBQ sauce. Turn the crockpot to Keep Warm and set sit all day. If you can (ie if you’re home), keep tossing the meat throughout the day. It helps distribute the BBQ sauce. I also add extra seasonings during this time if it needs it.
- By that afternoon, most of the extra liquid should have cooked off. Serve with extra BBQ sauce to taste and enjoy!
