Protein Pancakes

These pancakes are a huge favorite with our son. You can make them either as pancakes or waffles. I make them dollar-sized and he just gobbles them up almost straight from the pan/griddle.

Ingredients

  • 6 eggs
  • 1 cup cottage cheese (I use 6% milk fat when I can find it)
  • 1 cup oats
  • 2 tsp vanilla
  • 2 heaping tablespoons almond or peanut butter
  • 1/2 tsp salt
  • 1/2 – 1 tsp cinnamon (depending on taste)
  • 2 tsp baking powder
  • 1/4 cup maple syrup (optional)
  • 1 ripe banana (optional)

Directions

  1. Add everything to a blender and mix until smooth.
  2. Cook in your choice of fat.
  3. Enjoy!
