French Toast Bake with Minimal Added Sugar

So we were watching Puppy Dog Pals this morning and poor Bob didn’t have bread for his French Toast. And naturally, our son wanted French Toast too after Bingo and Rolle went to Paris to get some French bread. Ce la vie.

So I created a French toast bake with minimal added sugar, after browsing the internet for a bit. And I got to use up my very ripe bananas. Score.

Rip your bread up into a 2 qt pan like this. Don’t be a dork like me and forget to butter the dish ahead of time. I had to take it all out, butter the dish, and put it back in. Ugh.
Mash your bananas and mix with the rest of the ingredients. I left my bananas a little on the chunkier side.
Pour the mixture over the bread and mash down. Sprinkle sugar on top to taste. I kept mine pretty lite.

Ingredients

  • 2/3 loaf Dave’s Killer Bread – Sprouted Grains
  • 4 large egs
  • 1 1/2 cups heavy cream
  • 3 ripe bananas
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • Butter for greasing the pan
  • Turbinado sugar for sprinkling on top

Directions

  1. Preheat your oven to 400 degrees.
  2. Grease a 2 qt pan liberally with butter.
  3. Rip your bread into chunks and layer evenly in the pan.
  4. Mash your bananas and mix with the rest of the ingredients.
  5. Pour liquid over the bread and mash down to make sure everything is coated nicely.
  6. Sprinkle sugar on top to taste.
  7. Bake for 35-40 minutes, or until egg has cooked through.
  8. Enjoy the deliciousness.

Side note: I had some melted chocolate to use up so I reheated that and drizzled it on top. While it’s not necessary, it was a fantastic addition. A nice caramel sauce would also go really well on top of this.
